Recipe: Quick Thai Green Curry

Serves 4

Ingredients

400g tin coconut milk

2-3 tbsp Tesco Thai

Green Curry paste (for taste)

500g chicken breast fillet, thinly sliced

3 Kaffir lime leaves

150g green beans, trimmed into pieces

1 tbsp palm sugar

1 tbsp fish sauce

100g frozen peas

20g Thai basil leaves

Coriander leaves

Red chilli

Method

1  Heat half the coconut milk in a pan and stir through the Thai curry paste

2  Add the chicken and the lime leaves and the remaining coconut milk and cook, stirring occasionally, until the chicken changes colour

3  Add the green beans, palm sugar, fish sauce and cook for around five minutes

4  Add the frozen peas and cook until tender

5  Garnish with basil and coriander leaves and sliced red chilli

Serve with steamed jasmine rice.
