Breaded Veal Cutlets Recipe

Veal is a meat that’s often overlooked. It is tender, delicate and full of flavor.  It’s perfect for barbecue, since the grilling method gets the meat cooked before it dries out.

Serves 8


4 veal cutlets, pounded to 1cm thick

80g flour

3 eggs, beaten

2 tbsp milk

80g breadcrumbs

50g Parmesan cheese, grated

2 tsp chopped fresh or dry herbs of your choice

2 tbsp olive oil

2 tbsp butter

Salt and pepper


1 Take three plates. On the first put the flour, on the second put the beaten egg and milk, and on the third the breadcrumbs, herbs, and Parmesan cheese

2  Season the veal with salt and pepper

3  Dredge cutlets first in flour then the egg mixture and lastly, the bread crumb mixture

4  Heat a large frying pan with the butter and oil over medium heat and fry brown cutlets for about three to five minutes on each side

5  Serve with boiled potatoes or with pasta in tomato sauce
